2 sticks margarine, softened
1/4 cup granulated sugar
3/4 cup brown sugar (tightly packed)
1 tsp. vanilla extract
1 package of Jello's French Vanilla Instant Pudding
2 eggs
1 tsp. baking soda
2 1/2 cups flour
1 12 oz. package of mint chocolate chips
(or regular semi-sweet chocolate chips for plain chocolate chip cookies)
1. Stir together softened margarine, sugar, brown sugar, vanilla extract,
and dry pudding mix.
2. Stir in 2 eggs.
3. If you are making mint chocolate chip cookies, then take 3 or 4 ounces
of the mint chocolate chips
and melt them. Stir in melted chips. If you are making regular
chocolate chip cookies, skip this step.
4. Gradually stir in baking soda and flour.
5. Stir in remaining mint chocolate chips (or all of the semi-sweet
chocolate chips for regular cookies).
6. Spoon onto cookie sheet in round balls about 1 1/2 inches apart.
7. Bake at 375 degrees for 8 minutes or until golden brown.
